  1、买回来的螺刷洗干净静养个两天,养螺的清水中滴上几滴菜油或香麻油催其吐泥沙,其间注意勤换水;

  2、水养干净后的螺可以开始烹饪了:将螺蛳放入锅中,锅内坐水水量淹过螺,切两片生姜入锅,小葱挽葱结入锅(呵呵,没挽好散了),大火煮开锅后淋入料酒,转小火焖煮40分钟左右;

  3、将螺蛳捞出锅,为了后期调料入味,用椰锤将螺蛳壳稍稍敲碎;煮螺的水别倒了,撇去上层的浮沫,将水沉淀后,滤出中段煮螺水1碗左右备用;

  4、青蒜洗净取蒜白部分斜切成段,生姜切丁块状;香辛料用温热水稍加浸泡捞洗干净备用;铁锅烧热注油,将蒜白姜块香辛料投入锅中,中小火煸香;

  5、将螺蛳倒入锅中,转大火翻炒,喷入生抽、老抽,炒出酱香味;

  6、将自制混合豉汁料1小碗倒入锅中翻炒;将佬米酒碾碎也加入锅中炒散;

  7、煮螺水(沉淀过滤后的)倒入锅中,水量以淹平螺面为好,煮开锅后,转中小火加盖焖至汤汁收浓(约30分钟),炒螺蛳要带点汤汁才好吃,注意水别收得太干了;

  8、转大火翻炒螺蛳,试下味酌情添加精盐,起锅前将香菜段加入兜炒两下。
